To be completely transparent, I am a buffoon in the kitchen. For real. The whole ‘if you can read, you can cook’ thing doesn’t apply to me. I am more of an ‘I have a kitchen because it came with the house’ sort of gal. It’s not for lack of trying, so when my husband declared ‘Holy Granoly!’ after sampling my batch of granola, I considered it one of my few culinary successes. It is a simple recipe, but I will gladly add Holy Granoly to the victory column of my kitchen battles.
Holy Granoly!
Ingredients
- 3 cups of old-fashioned rolled oats
- 1 cup of raw pumpkin seeds (hulled)
- 1 cup of raw sunflower seeds (hulled)
- 1 cup of coconut chips
- 1 ¼ cup of raw nuts of choice (whole or coarsely chopped)
- 3/4 cup of maple syrup
- ½ cup of extra-virgin olive oil
- 1 teaspoon of sea salt for the pre-baked mix, and a sprinkle extra for the finished product
Directions
- Preheat oven to 300°.
- Mix dry ingredients in a large bowl. Add liquids. Mix until well combined.
- Spread the mixture into an even layer on a baking sheet that has a rim.
- Bake, stirring every 10 minutes until the ingredients are browned and nicely toasted, about 30-40 minutes depending on your oven.
- When done, remove from oven and give the mixture a little extra sprinkle of salt.
- Let the mixture cool completely, and then store in an airtight container.
Yield: 7 cups
Shelf Life: Up to one month
It is easy to freestyle with this recipe. (‘Freestyle’ is a culinary term, no?) Sometimes I will add my favourite spices and dried fruits. For example, I make a seasonal fall batch with pumpkin pie spice, dried cranberries and currants. If you are going to add dried fruit, be sure to mix it in after the granola has been baked.
