Honey Dijon Salmon & 3 Bean Salad

Beans are a very non-expensive source of protein. They contain a ton of nutrients including antioxidants, and vitamins and minerals, such as copper, iron, magnesium, manganese, phosphorous, potassium and zinc.

Try out this protein packed and nutrient dense dinner!

Honey Dijon Salmon

Ingredients

  • 2 portions of salmon

Marinade:

  • 2 cloves garlic
  • 3 tablespoons honey
  • 3 teaspoons Dijon mustard
  • 1/8 tsp sea salt

Method

  • Preheat oven to 400F
  • Combine all of the ingredients for the marinade together, whisk to combine well
  • Arrange the salmon on a baking sheet
  • Add the marinade to the salmon
  • Bake until thoroughly cooked, approximately 15-20 minutes, depending on the size of the salmon

3 Bean Salad

Ingredients 

  • 1 can black beans, rinsed and drained
  • 1 can kidney beans, rinsed and drained
  • 1 can garbanzo beans, rinsed and drained
  • 2 bell peppers, chopped
  • 1 red onion, chopped
  • 1/2 cup olive oil
  • 1/2 cup red wine vinegar
  • 1 clove garlic, crushed
  • 1 tbsp fresh lemon juice
  • 1/2 tsp fresh basil, chopped (or the herb of your choice)
  • 1 tsp sea salt
  • 1/2 tsp black pepper

Method

  • Combine ingredients in a bowl. Mix and serve.
