It’s An Egg-cellent Morning For An Omelette!

I am a busy girl, which I love don’t get me wrong. It certainly keeps me active! However, most days I am on my feet for at least eight hours a day running around. Between work, two dogs, and house chores, I can barely think straight by the end of the day. My daily tasks takes a lot energy out of me.

I find that I really need a good satisfying breakfast to keep my mood and energy levels up during the day. It has been said that having a healthy balanced diet every morning, sets you up for a successful day. I believe that one hundred percent, especially these last couple weeks which has been more hectic then usual. I have switched between a couple recipes over time (yogurt parfaits, toast, and oatmeal) and nothing has helped me as much as cooking up a healthy colorful omelete!

Omelettes are so versatile. They can be personally customized to fit your macros, and your favourite foods. Eggs can be easily incorporated into the diet, whether the goal is to maintain, gain or loss weight. As an egg contains only about 72 calories, and all the essential amino acids it is the perfect addition to anyone’s diet.

Ingredients

  • 2 Organic eggs
  • 2 Tsp of coconut oil or olive oil
  • Vegetables of your choosing (I usually use organic kale, spinach, mushrooms, onion and cherry tomatoes)
  • Cheese (if desired)

Directions

  • Add oil to the pan along with the vegetables of your choosing, sauté until soft and place on a plate for later use
  • Mix the two eggs in a separate dish with a fork – add salt and pepper if desired
  • Add oil to the pan and add eggs, place the lid on the pan on low to medium heat
  • While the eggs are cooking, cut cheese (if desired)
  • Once the eggs are fully cooked on the top, flip omelette
  • Add sautéed vegetables on ½ the omelette, cheese and then fold the top of the omelette over
  • Cover with the lid for 2 minutes, flip, cover for another 2 minutes
  • Enjoy!
