Keto Brownie Cheesecakes

Being on a ketogenic diet doesn’t mean you cannot indulge once in a while. With some simple substitutions, you can turn your favourite recipe keto friendly. This recipe uses “Swerve”, a sugar alcohol instead of traditional sugar for sweetness.

Contradictory to its name, sugar alcohols do not actually contain alcohol. They share some of the same chemical characteristics of sugar, including the sweetness but are not completely absorbed by the intestines – this results in a low or no calorie and low or no glycemic effect on the body. In the ketogenic diet, carbohydrates due to “polyols” or “sugar alcohols” are generally not included in the carbohydrate count. So you get the benefit of the sweetness but not the carbohydrates.

A bit of a warning however, because sugar alcohols are not digested, they can have a laxative effect, especially in younger people. Similar method of action to the common laxative “lactulose”, another non-absorbable sugar.

So, without further ado – here is a my recipe for Keto Brownie Cheesecakes!

Keto Brownie Cheesecakes

Ingredients

  • 100g Salted Butter
  • 100g 85% (or higher) Dark Chocolate
  • 2 Eggs
  • 1 package of Cream Cheese Full Fat (250g)
  • 1/4 and 1/8 Cup Swerve
  • 1 Tbsp coconut flour
  • 2 tsp Baking Powder
  • Vanilla Extract

Directions

Preheat oven to 350F

  • Melt together chocolate and butter (option to add splash of vanilla), I use the Wilton Candy Melter but you can use a double boiler.

  • Whisk together the eggs, 1/4c swerve, vanilla and baking powder.

  • Mix together cream cheese, vanilla and swerve (1/8c) until completely blended.

  • Combine the melted chocolate/butter mixture to the egg/swerve mixture. Whisk – it will thicken as you stir which is normal. To thicken a little more, sprinkle the coconut flower into mix.

  • Line a small glass dish with parchment paper and pour half the mixture onto the bottom. Then scooping small blobs of the cream cheese mix, layer that on top. Once done, pour the remaining batter mix on top and smear contents together ensuring the contents are even in the dish. You also have the option to add some of your favourite nuts at this point.

  • Bake for approx. 20-25 min depending on how gooey you like your brownies. Remove from oven and let cool, the refrigerate to set the cream cheese.
