My Favourite Overnight Oats

Ingredients

  • 1/2 cup gluten free oats
  • 1/2 cup unsweetened almond milk
  • 1/2 banana
  • 1-2 tbsp unsweetened coconut yogurt
  • 1 tbsp peanut butter (or your favorite nut butter!)
  • 1 tsp maple syrup (or to taste)
  • 1 tbsp chia seeds
  • 1/4 tsp cinnamon

Directions

  • Mash the banana and then add the peanut butter and yogurt and mix well
  • Add the dry ingredients, mix well and then add the milk
  • Transfer into a container with a lid, I like to use mason jars as they are air tight and won’t spill in my bag!
  • Place in the refrigerator overnight

Single serving.  Will keep for up to 5 days.

It can be warmed up or eaten cold, I like mine a little warmed up with blueberries added!  Be creative and add your favorite toppings.  Enjoy!
