As the parent of a child with life-threatening nut allergies, one of the frequent tasks I am charged with is ad-libbing recipes that typically contain nuts. Granola is a food that is next to impossible to purchase in the stores without any nuts included in the ingredients. Since my son is allergic to both peanuts, as well as tree nuts (almonds, walnuts, cashews, pecans, etc), store-bought granola is virtually impossible. Most recipes you do find though contain almonds, walnuts or pecans. So I’ve experimented over the years in an effort to recreate a healthy and safe granola to keep in our cupboards.
Nut-Free Granola
Ingredients
- 1/2 Cup Organic Coconut Oil
- 1/4 Cup Local Honey
- 1/4 Cup Organic Maple Syrup
- 4 Cups Organic Rolled Oats
- 1/3 Cup Organic Sunflower Seeds
- 1/3 Cup Organic Pumpkin Seeds
- 1/2 Teaspoon Cinnamon
- 1 Teaspoon Pink Himalayan Sea Salt
- 2/3 Cup Organic Coconut Flakes
- 2/3 Cup Dried Organic Mixed Berries
Directions
- Preheat oven to 350 degrees.
- In a small saucepan, combine coconut oil with honey and syrup.
- Heat until melted and combined.
- Mix in all remaining ingredients except for coconut and berries.
- Spread on a baking sheet.
- Bake in preheated oven for 20 minutes.
- Remove from oven and stir the granola.
- Add in the coconut flakes and dried berries.
- Return pan to oven for 10 minutes.
- Remove pan to cool.
- Once cool, store in an airtight container.
