A mouth-watering family favourite breakfast scone! Enjoy it plain or pair with butter or a jam of your choice.
Old Fashioned Cranberry Orange Scones
Ingredients
Makes 16 scones
- 3 cups Gluten free all-purpose flour
- ½ tsp Himalayan salt
- 4 tsp organic baking powder
- ½ tsp organic baking soda
- ¼ cup cold organic non salted butter
- 1 cup fresh or frozen organic cranberries
- 10 tbsp organic applesauce
- 250 grams of homemade plain yogourt
- Grated peel of 1 large organic orange
Directions
- Preheat oven to 4000 F
- Combine first 5 ingredients in a large bowl; mix well
- Cut in butter (pea sized) and continue to mix well
- Add cranberries
- In a smaller bowl, combine the applesauce, yogurt and orange peel
- Add ½ of the wet ingredients to the dry bowl ingredients and mix gently with your hands, do not knead
- Continue to add the remainder of the wet ingredients until all is completely mixed together
- Divide in half and use your hands to pat each half into a circle about 8 inches in diameter onto a greased baking sheet
- Cut each circle into 8 wedges
- Separate them on the baking sheet and bake for between 18-25 minutes or until browned
- Use the bake setting on your oven instead of the convection bake as that will dry them out too much
- Cool on rack and serve!
