Old Fashioned Cranberry Orange Scones

A mouth-watering family favourite breakfast scone!  Enjoy it plain or pair with butter or a jam of your choice.

Old Fashioned Cranberry Orange Scones

Ingredients

Makes 16 scones

  • 3 cups Gluten free all-purpose flour
  • ½ tsp Himalayan salt
  • 4 tsp organic baking powder
  • ½ tsp organic baking soda
  • ¼ cup cold organic non salted butter
  • 1 cup fresh or frozen organic cranberries
  • 10 tbsp organic applesauce
  • 250 grams of homemade plain yogourt
  • Grated peel of 1 large organic orange

Directions 

  • Preheat oven to 4000 F
  • Combine first 5 ingredients in a large bowl; mix well
  • Cut in butter (pea sized) and continue to mix well
  • Add cranberries
  • In a smaller bowl, combine the applesauce, yogurt and orange peel
  • Add ½ of the wet ingredients to the dry bowl ingredients and mix gently with your hands, do not knead
  • Continue to add the remainder of the wet ingredients until all is completely mixed together
  • Divide in half and use your hands to pat each half into a circle about 8 inches in diameter onto a greased baking sheet
  • Cut each circle into 8 wedges
  • Separate them on the baking sheet and bake for between 18-25 minutes or until browned
  • Use the bake setting on your oven instead of the convection bake as that will dry them out too much
  • Cool on rack and serve!
