One Pot Cooking

I love cooking in one pot… It allows me to combine flavours and colours and keep things simple.  One of my current favourite dishes (pre-summer) is my Ground Duck Hash.

One Pot Cooking

For this, you will need

  • 1 lb of ground duck (or any other meat – you could also use cauliflower rice*)
  • 1 sweet potato – peeled and finely chopped
  • 3 cups of fresh spinach –  chopped
  • Onion, garlic – finely chopped
  • Salt and pepper to taste
  • Coconut or avocado oil

*if you use cauliflower rice, you might want to add some coconut aminos as it makes it taste yummy.  The cauliflower makes it a good plant based meal.*

Directions 

  • Sautée the onions, garlic (I use a cast iron frying pan) in coconut or avocado oil
  • Add ground meat or cauliflower and cook
  • Once cooked, set aside
  • Peel and finely chop the sweet potato…fry them in the pan.  I like for them to get brown and crispy
  • Once cooked, stir fry the sweet potatoes and meat / cauliflower
  • Add spinach…turn up the heat so that the mixture does not get watery….and toss into the mixture

Serve over a bed of salad or sprouts with avocado and enjoy!
