Peanut Butter Banana Energy Bites

Are you or is there someone you know who is obsessed with peanut butter? For me, it is my husband. I’m more an almond fan myself, but he can eat peanut butter by the spoonful.

So, I thought, why not come up with an energy bite recipe that I know he would love? I created an almond one a few weeks back and coming up with this one came pretty easily, with a few adjustments.

A quick note – these are very moist, so they definitely need to be refrigerated after making and to maintain quality.

Peanut Butter Banana Energy Bites

Ingredients

  • 1 1/2 cup oats
  • 1/3 peanut butter
  • 1 mashed banana (small)
  • 1 tbsp honey
  • 1 tbsp coconut oil
  • 1 tbsp raw cacao nibs
  • 1 tbsp chia seeds
  • 1 tbsp flax seeds
  • 1/2 tsp vanilla extract

Instructions

Mix all ingredients together in a large bowl and refrigerate for 1-2 hours. After refrigeration, roll into bite-size balls. They will keep well in the fridge for up to a week – or keep in the freezer and take out as wanted.
