We can look at eating healthy in many ways. One way would be to have the mindset that we need to limit ourselves and dislike our meals. Another mindset is that of ABUNDANCE. Focussing more on what we have the privilege to eat and how good food can make us feel!
For those of us who do love some of the classics that are deemed as unhealthy, fattening, artery clogging, toxic and downright just plain garbage food, GET CREATIVE! Have your Alfredo sauce and eat it too!
Primal Cauliflower Alfredo Sauce
Ingredients
Serves: 4
- 1 medium head of cauliflower
- 1 yellow onion
- 3 cloves garlic
- 1-2 tablespoons grass fed butter or ghee
- 1 cup canned coconut milk
- ½ cup vegetable or chicken broth
- ¼ cup nutritional yeast(will give it a slightly cheesy flavour)
- 1 teaspoon Himalayan sea salt
- 1 Tablespoon of Garlic Powder
Optional:
- 1 Scoop Collagen Protein Powder
- 1 Tablespoon Tapioca Flour (to thicken)
Directions
- Cut the onion and garlic into thin slices. Melt half of the butter/ghee in a skillet on low heat, add onion slices and sauté covered on low until the onions are golden and caramelized. Add the garlic to the onion for the last 5 minutes of cooking.
- Bring a pot of water to a boil. Cut the cauliflower into florets, add to the water and then turn off the burner and cook until tender (7-10 minutes).
- Place the tender cauliflower florets into a blender together with the caramelized onions, garlic, broth, coconut milk, nutritional yeast, remaining butter/ghee and salt. Puree until smooth.
- Add the collagen powder and/or tapioca flour at the end and blend until combined.
- I poured my sauce on top of lightly boiled kelp noodles and even added some sautéed shrimp and mushrooms!
