Quick Vegan Casserole

This is a great recipe, perfect for when you just don’t have the energy or the time required to make dinner. A simple one dish meal that consists of delicious vegetables, herbs and spices.

Ingredients

  • 2 Tbsp olive oil
  • 1 Large yellow onion, thinly sliced or chopped
  • 2 Cloves garlic, crushed
  • 5-6 Tomatoes, thinly sliced or chopped (can substitute with a can of diced tomatoes)
  • 3-4 Potatoes, thinly sliced or chopped
  • 2-3 Medium zucchini, thinly sliced or chopped
  • 1 Tsp thyme
  • 1 Tsp oregano
  • 1 Tsp sea salt
  • Sprinkle of pepper

Directions

  • Preheat oven to 375 degrees F (190 degrees C)
  • Start by drizzling the olive oil at the bottom of the dish. Spread onions and garlic overtop
  • Layer with the potatoes, zucchini and tomatoes
  • Sprinkle the thyme, oregano and sea salt
  • Cover with foil
  • Bake in preheated oven for 30 minutes
