Quick Vegan Casserole
This is a great recipe, perfect for when you just don’t have the energy or the time required to make dinner. A simple one dish meal that consists of delicious vegetables, herbs and spices.
Ingredients
- 2 Tbsp olive oil
- 1 Large yellow onion, thinly sliced or chopped
- 2 Cloves garlic, crushed
- 5-6 Tomatoes, thinly sliced or chopped (can substitute with a can of diced tomatoes)
- 3-4 Potatoes, thinly sliced or chopped
- 2-3 Medium zucchini, thinly sliced or chopped
- 1 Tsp thyme
- 1 Tsp oregano
- 1 Tsp sea salt
- Sprinkle of pepper
Directions
- Preheat oven to 375 degrees F (190 degrees C)
- Start by drizzling the olive oil at the bottom of the dish. Spread onions and garlic overtop
- Layer with the potatoes, zucchini and tomatoes
- Sprinkle the thyme, oregano and sea salt
- Cover with foil
- Bake in preheated oven for 30 minutes
