Who doesn’t love pizza!? I admit I have a weakness for it, which has made me look for alternative, healthier options; and these quinoa pizza bites are healthy, nutritious and satisfying. They can also be vegetarian just omit the pepperoni.
I am always trying to find ways to incorporate more quinoa into our diets. This plant-based protein is a versatile food. It can be eaten as a pasta, rice or used in baking or as a cereal to name a few.
One cup packs a whopping 8g of protein, 5g of fibre. It is a complete protein which means it has all of the essential amino acids necessary for good health.
You will need:
- 2 cups of cooked quinoa
- 2 large eggs
- 1 cup of chopped onion
- 1 cup of shredded mozzarella cheese
- 2 tsp mind garlic
- 1/2 cup fresh basil, chopped
- 1 cup chopped pepperoni ( or omit to make this a vegetarian recipe)
- 1/2 tsp seasoning salt
- 1 tsp paprika
- 1 tsp dried oregano
*Pizza sauce for dipping
Instructions:
- Preheat oven 350 degrees
- Mix together all ingredients except the pizza sauce, in a medium bowl.
- Grease muffin tins, filling each cup to the top, and press down gently to compact.
- Bake for 15-20 minutes.
Dip into the pizza sauce and enjoy!
