If you’re looking for a refreshing lunch or snack idea on a hot day, this is it! There’s so many fresh flavours that dance in your mouth, it’ll make you feel like you’re eating something naughty….but I promise, you’re not!
Avocados are rich in heart healthy monounsaturated fats, fibre, vitamins C, E, K and the B’s. Not to mention copper, potassium and magnesium. Add to that carrots, which are loaded with vitamins A and K, biotin and fibre. And flavonoids such as quercetin found in spring onions which have anti-inflammatory and anti-histamine benefits.
Let’s not forget the beautiful star of the show, DILL!! Which is also loaded with vitamins A and C, manganese, iron and calcium and has been known for it’s ability to boost digestion, provide relief for menstrual and respiratory disorders and relieve pain from arthritis as an anti-inflammatory herb. Raw Avocado Flatbread
Servings: 2
Ingredients
- 2 pieces whole wheat naan bread
- 1 whole smashed avocado
- 1 cup shredded carrots
- 1/2 cup diced spring onions
- 4 tbsp fresh dill
- Himalayan pink salt and smoked paprika to taste
Directions
- Spread smashed avocado over entire surface of naan bread
- Sprinkle with shredded carrots, spring onions and fresh dill
- Season with salt and smoked paprika… That’s it!
