I love a good dessert and every time I make this delicious raw pie it doesn’t last long in the household. Raw desserts are so simple to make, perfect for the waist line if you don’t over indulge and keeps your appetite happy. Made from whole foods, you are getting full nutrition as the nutrients haven’t been processed out. This pie is full of Vitamin A, Vitamin E, potassium, good fats and protein to give you sustained energy.
Raw Carrot & Coconut Cream Pie
Serves: 12
Crust Ingredients
- ¾ cup shredded carrot
- 1-cup walnuts
- ¾ cup dates
- ¼ cup shredded coconut
- 1 teaspoon coconut oil
Filling Ingredients
- 1 ½ cup cashews
- 3 tablespoons coconut oil
- ½ cup maple syrup or organic honey
- 1-tablespoon vanilla
- ½ cup coconut milk
Instructions
- Combine crust ingredients in food processor and blend until all ingredients stick together. Don’t over blend so that it’s too mushy and sticky.
- Using a round dish or tray, lightly oil the base and start pressing crust firmly until evenly pressed throughout.
- Place in freezer for 10 minutes.
- Combine all ingredients for filling into a high-speed food processor.
- Blend until creamy and there are no lumps.
- Pour on top of prepared crust and sprinkle with coconut.
- Let the dessert set in freezer and serve cold.
- Garnish with apricots or anything that you desire.
