Zucchinis are juicy, delicious, easy to prepare and so versatile in the kitchen. I guess that’s why Zucchinis are one of my favourite vegetables to cook with, prepare raw in salads or in this case a raw creamy pesto “pasta”.
This nutritious pasta substitute and raw recipe is a perfect summer meal leaving you feeling light and energized. It is low calorie, gluten free, raw, dairy free with a high fiber content, packed with Vitamin A, C, potassium, calcium and Iron. Your body will love you after this!
Raw Creamy Pesto “Pasta”
Serves: 2
“Pasta” Ingredients
- 2 Medium zucchini
- 2 Tablespoon of olive oil
- 1/2 Teaspoon of sea salt
- 1 Cup cherry tomatoes
- Handful of fresh basil
Raw Pesto Ingredients
- 1 Garlic clove
- 1 Avocado
- Juice of 1/2 lemon
- 1/2 Teaspoon of paprika
- 1 Cup of fresh basil
- 1/2 Tomato
- 1/2 Cup filtered water
Instructions
- Chop ends off zucchini and use a vegetable peeler to remove zucchini skin (a spiralizer is optional if you have one). Make your pasta by peeling away medium sliced strips. Zucchinis hold a bit of water content and pasta can get very soggy so a good tip is to place peeled strips onto paper towels to help absorb moisture
- Once peeled and patted down with paper towels place zucchini pasta into bowl and add olive oil, salt, cherry tomato, finely chopped basil and stir well
- Next step combine all pesto ingredients into blender and blend until smooth and creamy
- Pour pesto into pasta bowl and mix through
- Serve fresh and garnish with fresh basil leaves
