We all miss certain comfort foods when we begin to make adjustments in our diet. For me, one of the foods I missed was chicken salad. This recipe is a vegan alternative that gives the texture and flavor of one of my favorite foods.
Recipe For Chick-Less Salad
Ingredients
- 1 15 ounce can of garbanzo beans, mashed
- 2 stalks of celery, sliced thinly
- 2 green onions, sliced thinly
- 2 pickles, sliced thinly
- 3 tablespoons of mayonaise
- 1 tablespoon of brown mustard
- Salt and pepper to taste
Instructions
- Combine all ingredients into a bowl
- Serve on whole grain toast, or as a topping on green salad
