Recipe: Roasted Radish

Last week, I bought a giant bag of radishes with the best intentions.

To be completely honest, they’ve always kind of been foreign to me. I knew they contained a LOT of nutritional value (antioxidants galore, great for digestion, great for liver detox, leaves skin glowing, etc!), but I had only ever used them raw on salads or avocado toast.

So off to Pinterest I went to see what I could come up with. To my complete surprise, I discovered that they make an excellent side dish when roasted in the oven!

Raw radish is known for it’s strong, bitter taste, but when roasted, they are left with a slightly sweet, soft taste that we found quite similar to that of zucchini. They get crisp on the edges, but are quite juicy inside. We will make this one again and again!


We simply washed, tossed in E.V.O.O (extra virgin olive oil) and a pinch of sea salt, and roasted in a pre-heated oven at 400F until edges were browned (20 minutes or so). We flipped them halfway and served as a side. Super easy, super tasty!
