It’s SPRING and it’s strawberry season, so why not add some romance to your salads and try this Strawberry Pistachio Salad! I really love a little bit of whatever I have in the fridge or my cupboards when I make my salads. It’s a great way to clean out your fridge so you get the most of your groceries… Nobody wants wasted food!! So let’s get crazy and add some sweet flavours to our day because life is too short for average food!
Here’s the recipe for my ‘romantic’ Strawberry Pistachio Salad
Ingredients
♥ Dressing ♥
- 3 Tbsp. (ish) Orange Juice
- 1 Tbsp. Olive Oil
- 2-3 Tbsp. Balsamic Vinegar
- 1/4 Tsp. Salt & Pepper
- 1-2 Tsp. Dijon Mustard
- 1/2 Tsp. Honey
This will make more than one serving – it really depends on how much dressing you like on your salads, but ideally use 1 – 2 Tbsp on your portion and save the rest for another day and another salad.
♥ Veggies ♥
- Baby Spinach – Chopped
- Zoodles (Spiralized Zucchini)
- Yellow and Red Peppers – Diced
- Cucumber – Diced
- Strawberries! – Sliced
- Pistachio’s – Chopped
- 1/2 cup Cooked Quinoa – Add some Orange Zest to your Quinoa for extra flavour!
- 1/4 – 1/2 Avocado – Optional
I only ever make enough for myself, I eat intuitively, and therefore I don’t measure how much of my veggies I’m adding to my salads. I always load my salads with Veggies and some additional nutrients from whole grains and some healthy fats.
If you make too much and you’re full, toss the rest into a mason jar and save it for another time! So chop away and add as much of each ingredient as you like into a bowl. Most of all.. ENJOY 🙂
