Shaved Brussels Sprout Salad

Ingredients

For salad

  • 1 lb (454 g) of brussels sprouts
  • 1/4 cup red onion, chopped.
  • 1 tart apple: green or Macintosh, chopped
  • 1/2 cup walnuts, chopped

For Vinaigrette

  • 1/4 cup olive oil
  • 4 TBS red wine vinegar
  • 2 tsp maple syrup
  • 1 clove garlic, crushed
  • 1 TBS dijon mustard (or grainy mustard for texture)
  • Sea salt and pepper to taste

Method

  • Wash the brussels sprouts and cut off the tough stem end
  • Using a mandoline, with a guard, shave the brussels sprouts into a large bowl
  • Add the remaining ingredients for the salad
  • You can add in optional ingredients, like dried cranberries, feta cheese if you like
  • Mix/Whisk all the vinaigrette ingredients together and pour over the salad when you are ready to serve
