This refreshing salad can be a meal in itself! It’s crisp and delicious while the spinach delivers protein and vital minerals and nutrients. The powerful and tasty walnuts give us the omega 3s and antioxidants that are essential to keep us healthy. It’s also quite a beauty and perfect to serve guests, nourishing their hearts and bodies.
Spinach, Apple & Walnut Salad With Tofu Dressing
Ingredients
Spinach Salad
- Fresh, organic spinach
- Apple, chopped
- Walnuts
- Dried figs, chopped
- Black olives, halved
Tofu Dressing
- 1 box of organic, silken tofu
- 1/2 c. vegan mayo (Veganaise is my preference)
- 2 T. pickle relish
- 2 T. apple cider vinegar
- 1 tsp. Dijon mustard
- 1 T. local honey
- 1/2 c. filtered water
Directions
- Throw everything in a blender for a bit until it’s nice and creamy
- Store in a glass jar in the refrigerator
