As the weather finally gets warmer, it feels as though summer may be upon us! That has me even more excited for summer barbecues and get togethers with family and friends. Over the years when we have had pot-luck barbecues, I’ve noticed that healthy dishes are few and far between, while there is an overabundance of desserts. So in preparation for the upcoming summer season, I’ve prepared a few options that are easy to make and delicious.
This quinoa salad is one of my favourite dishes. Served cold, it makes a great addition to any event!
Summer Quinoa Salad
Ingredients
- ¼ cup Olive Oil
- 1 red pepper, chopped
- 1 cup cucumber, diced
- 1 clove garlic, minced (more if desired)
- 1 cup dry organic quinoa, prepared according to the instructions on package
- 3 tablespoons lime juice
- 1 can 6-bean medley (drained and rinsed)
- ½ cup herb and garlic feta cheese
Directions
- Combine all of the above ingredients in a large bowl. Top with diced avocado and feta cheese.
