Summer Salad

I am excited to share my new favorite summer salad recipe, I can’t seem to get enough. I love eating food that’s in season, bought locally, is easy to find and is priced right. You also know you are getting more nutrients then if the food had been shipped from half way around the world. As you look at the simple ingredient list below you can start to see how many health benefits there are to this amazing salad.

Even the goat cheese has a hand up on cow’s cheese, it has more vitamins and minerals, lower in calories, easier to digest and with less lactose then cow’s cheese so it is often tolerated by people with allergies to dairy. Goat cheese is a good sources of protein, but there is a lot of saturated fat so I do caution eating more than the recommended serving size on the package. You will get an abundance of omega fat in the nuts and seeds which our bodies need but again remember portion control as they are dense in calories.

Blueberries, raspberries, spinach, and kale are all good sources of vitamins and nutrients, and full of antioxidants. I could go on about the benefits of each food but rather then promote this as a health food I would rather promote it for what is is, delicious fresh tasting food that is full of flavour and texture, made by Mother Earth!

Summer Salad

Ingredients

  • Spinach & kale mix
  • Blueberries
  • Raspberries
  • Cranberry goat cheese
  • Raw pumpkin seeds
  • Raw sunflower seeds
  • Raw pecans
  • Raspberry vinaigrette

Directions

  • Mix all ingredients into a bowl and drizzle vinaigrette on top

I either buy an organic raspberry vinaigrette or I have also used a home made recipe that I found on “Wellness Mama’s” website, which is delicious, I will add it below.

Ingredients

  • 1/2 cup white wine vinegar
  • 1/4 cup olive oil
  • 1/4 cup fresh or frozen raspberries
  • 2 teaspoons honey

Instructions

  • Put all ingredients in blender or food processor and blend until smooth
  • Store in the fridge for up to four days, though it is best when used freshly made
