Super-Charged Hummus!!!

The word hummus comes from the Egyptian term for chickpeas and the recipe, common throughout the countries of the Middle East typically consists of puréed chickpeas blended with tahini, lemon juice, olive oil, garlic, and herbs. But what if we add more nutritional seeds like sunflower and pumpkin seeds? I usually buy the raw organic ones and I lightly roast them in a pan at a very low temperature.

Super-Charged Hummus!!!

Ingredients

  • 2 cups drained well-cooked or canned chickpeas
  • 1/4 cup tahini (sesame paste)
  • 1/4 cup sunflower seeds
  • 1/4 cup pumpkin seeds
  • 1/4 cup extra-virgin olive oil
  • 2 cloves garlic, peeled
  • Salt and freshly ground black pepper to taste
  • 1 tablespoon ground cumin
  • Juice of 2 lemons, plus more as needed
  • Fresh chopped cilantro ( 3/4 cup approx)

Directions

  • Put in a food processor and begin to process; add water as needed to allow the machine to produce a smooth purée
  • Taste and adjust the seasoning (I often find I like to add much more lemon juice)

Serve and Enjoy!!!
