This recipe is a favourite in our household as we are always on the go. These bars provide a quick boost of energy and are packed with many antioxidants and anti-inflammatory properties to keep you healthy!

Sweet-More Energy Bars
Recipe makes approximately 24 squares
Ingredients
- 6-8 Medjool dates
- 1 Cup of hot water with 2 tablespoons of coconut oil
- 1 Cup almond butter (or you can ground 1 cup of raw almonds for a more crunchy consistency)
- ¼ Cup cocoa powder
- 1 Cup unsweetened shredded coconut
- 1 Cup sunflower or pumpkin seeds (or ½ of each)
- 1 Scoop of protein powder (for example, Sun Warrior Classic Protein or Vega Protein)
- ¼ Cup ground flaxseed
- ¼ Cup ground chicory root
- ¼ Cup chia seed
- ¼ Cup hemp seeds
- ¼ Cup oats
- ¼ Cup cocoa nibs (optional)
Instructions
- Mix the wet ingredients – spoon the coconut oil into the hot water and let dissolve. Then add the cut pieces of Medjool dates to soften them.
- In a stand mixer, combine the rest of the dry ingredients together and mix well.
- Slowly pour the liquid and date mixture into the dry ingredients in the mixer.
- Grease a 9 X 9 pan and press the mixture firmly into the pan.
- Place in the fridge to cool completely and cut into squares.
- Store the bars in the fridge to keep them from drying out.
