Sweet Hazelnut Brownies

You won’t feel guilty adding these delicious squares into your diet! In fact, you’ll find that they provide a nice boost of energy and help minimize symptoms of PMS including cravings and mood swings.

The natural sweetness of the baked sweet potato and endless benefits of cacao make these a great mid-morning snack or dessert. Pair a brownie with extra protein for a complete pre-training meal.

Cacao Cures

If you’re already craving chocolate, cacao is the way to go! High levels of flavanols make this powder one of the most powerful antioxidants available. Choose a cacao that hasn’t been treated with alkali, as this process removes the flavanols. The neuro-stimulatory effect of unprocessed cacao has been proven to elevate the mood and improve the sleep cycle. Along with these benefits, cacao is packed with essential minerals including magnesium, potassium, and iron, all of which can use a boost leading up to the beginning of your cycle. So go ahead, enjoy these brownies guilt-free!

Sweet Hazelnut Brownies

Ingredients 

  • 450 gr sweet potato (baked)
  • 2 TBSP soy protein (powdered)
  • 135 gr almond butter
  • 1 tsp vanilla extract (alcohol-free)
  • 30 gr almond flour
  • 30 gr unsweetened cacao powder
  • 1/4 tsp baking soda
  • 1/4 tsp sea salt
  • 30 gr hazelnuts, chopped

Directions

  • Preheat oven to 220°C. Wrap sweet potato in foil and bake until tender, about 40 minutes. Once cooled down the skin will have loosened, making it easy to remove.
  • Weigh out 450 gr. and save any leftover sweet potato for another meal! Blend in Ninja Blender or by hand in a medium bowl.
  • Reduce oven to 175°C.
  • In a small bowl, whisk soy protein powder with water until it reaches an egg-like consistency (about 6 TBSP). Add to the mashed sweet potato.
  • Add the almond butter and vanilla, stirring to combine if baking by hand.
  • Add almond flour, cacao, baking soda and salt. Blend or stir until just mixed.
  • Lightly coat an 8×8″ baking pan with coconut oil. Dump batter into the pan, using a spatula to spread it out evenly.
  • Top with chopped hazelnuts
  • Bake until set and the brownie starts to pull away from the edges, about 25 minutes. Let cool at least 10 minutes before cutting into 9 pieces.
