Packed with beta carotene, iron and protein this light supper with a side salad is a must!
Sweet Potato Crust Spinach and Goat Cheese Quiche
Ingredients
- Coconut cooking spray
- 1 large or 2 small sweet potatos washed and sliced 1/8″ slices
- 1 tsp extra virgin olive oil
- 1 small diced red onion
- 2 cloves of crushed garlic
- 1 diced roma tomato
- 5 oz bag of spinach
- salt & pepper to taste
- 4 eggs
- 4 egg whites
- 1/3 cup unsweetened non-dairy milk
- 1/2 cup crumbled goat cheese
- 1/2 tsp nutmeg
- salt & pepper to taste
Method
- Preheat oven to 375 F. Grease 9″ pie plate with cooking spray .
- Arrange slices around pie plate
- Slice in 1/2 if necessary and layer to fill bottom and side of pie plate.
- Spray with cooking spray and bake for 20 minutes.
While the the crust is baking add 1 teaspoon of olive oil in a skillet. Heat should be medium high. When skillet is hot add diced onion and cook until transparent. Add tomato and garlic and saute for two min stirring frequently to prevent burning the garlic. Add spinach until wilted. Remove from heat and let cool for a few minutes. Add spinach mixture to baked sweet potatoes. Pour whisked egg mixture on spinach and sprinkle goat cheese crumbles on top.
Bake for 30-35 minutes or until eggs are firm and top is golden brown.
Remove from oven and let rest for 5 minutes before serving, ENJOY!!!!!!
