With an abundance of rainbow swiss chard, matchbox chili peppers, and cherry tomatoes flourishing in my garden, I wanted a satisfying meal that would use some of these delicious, fresh vegetables! And it was so easy!
Swiss chard is a dark leafy green, full of nutrients such as Vitamin A, E, and K.
Tomatoes are a source of Vitamin C, and of a carotenoid called lycopene, both antioxidants.
Quinoa, a healthy grain source of protein and minerals.
Swiss Chard, Tomatoes, Quinoa
Ingredients
- One cup of quinoa, prepared as per the package directionsTwo cups of swiss chard: Stems sliced thin, and leaves roughly chopped.
- A cup of sliced cherry tomatoes.
- 3 cloves of garlic.
- 1/4 of an onion.
- 1 tsp Olive oil
- One chili pepper, diced very small
Directions
- Heat olive oil in a pan, add onion, chili pepper, and swiss chard stems
- Sautée for about 4 minutes
- Add tomatoes, and cook until soft
- Add garlic and swiss chard until softened
- Serve on top of the cooked quinoa, with a side of brussels sprouts & enjoy!
