The Perfect Roasted Chicken

One of my favourite meals to make is a roasted chicken. It’s a perfect Sunday night dinner and provides lots of leftovers for the week! It’s pretty hard to mess up roasting a chicken and the options for seasonings are endless. Here is my fool proof version.

The Perfect Roasted Chicken

Ingredients

  • 1 whole chicken, uncooked and defrosted
  • Coconut oil
  • Lemon slices
  • Cloves of garlic
  • Trader Joes Everything Bagel Seasoning

Directions

  • Preheat the oven to 425F
  • Take your chicken and place it in a roasting pan. Make sure you have cut off any string that may be holding your chicken together
  • Take a slap of coconut oil and liberally rub it all over your chicken. Don’t be shy!
  • Stuff the inside of your chicken with some lemon slices and cloves of garlic. Again, the more the better.
  • Take your bagel seasoning and shake over the entire chicken.
  • Pop that baby into the oven and cook anywhere from an hour to an hour and a half depending on your oven
  • Ensure that when you cut into the chicken, the juices run clear

There you have it! The perfect roasted chicken. My favourite sides to go along with this meal are some roasted brussell sprouts and sweet potatoes. You can even throw them in the roasting pan a long with the chicken.
