I follow a whole food plant based diet (vegan). This tofu is a perfect replacement for eggs! I usually wrap them up burrito style and freeze for a few quick breakfasts while on the run in the morning!
What you’ll need is 1 block extra firm tofu. I prefer silken tofu but any extra firm tofu will do. Just remember that you should always buy organic non-gmo tofu.
Tofu Scramble
Ingredients
In a non stick frying pan add:
- Chopped mushrooms
- Chopped onions
- Chopped peppers
- (small amount of oil for cooking, but if you’re like me i just sautee in water).
Once the veggies are soft add your tofu. Break it apart until it’s in smaller chunks.
Add:
- 1 tsp turmeric
- 1 tsp garlic powder
- 1 tsp onion powder
- 2 tsp nutritional yeast
- ½ tsp black salt (or regular salt)
- Pepper to taste
- (optional – hot sauce!)
Cook until everything is incorporated and the tofu is cooked through.
I LOVE wrapping this up in a whole wheat tortilla with salsa and black beans, or serve with toast and avocado.
