I just love starting the day off with a delicious warming bowl of porridge, and what I love about porridge is that you can vary the toppings so much that it never gets old.
Now that spring is here, I have really been enjoying this tropical porridge recipe as it feels so fresh and summery with the tropical fruit and the zing of the lime zest. This recipe is a great way to start the day with a spring in your step, no pun intended, well, kinda intended. 🙂
Tropical Oat Porridge
Ingredients
- 1 cup oats
- 1 cup of coconut milk
- 1 cup of water
- ½ mashed banana
- 1 tsp cinnamon
Toppings
- Passionfruit
- Lime zest
- Papaya
- Chia seeds
- Nut butter of choice
Ingredients
- In a saucepan combine the oats with the milk, mashed banana and cinnamon.
- Stir continuously on medium to low heat until all the liquid has been absorbed and you have the texture that you personally love.
- Pour into a bowl and add the toppings.
Oats are a great choice for breakfast because they are a nutritious source of low GI carbohydrate and they also contain plant protein. If you want to have a breakfast that will keep you going until lunch then you want to make sure you aren’t just eating carbohydrates that will be digested super fast, you want to combine carbohydrate with both protein and a little bit of fat. Well, porridge is such a great choice for this because in the oats you have the carbs and the protein and when you add a delicious spoonful of nut butter then you are adding some more plant protein and that little bit of fat that you need to keep you going.
Oats are one of the most economical, nutrient-dense foods, which mean they are a great source of minerals and vitamins such as vitamin B1, iron and manganese. Just half a cup of dry oats contains 20% of your iron RDI and 191% of your manganese RDI and 39% of the RDI of vitamin B1. Then there are all the micronutrients that you will get from the toppings such as fruit, nuts and seeds that you can add on top!
