Vegan Chickpea Sandwich

Chickpea Sandwiches

If you are looking for a new yummy sandwich, look no further! This chickpea sandwich is all vegan, very fresh and of course healthy!

Prep time – 10 min

Cook time –  0 min enjoy right after or let sit in fridge up to a week

Serves – 4

Ingredients

  • 2 cans of chickpeas
  • ½ red or orange bell pepper
  • 1 bunch of green onion
  • 2 stalks of celery
  • 2 tbsp Vegenaise
  • ½ cup diced dill pickles
  • Salt and pepper to taste
  • Fresh bread or wrap

Directions

  • Drain and wash chickpeas, after giving them a good rinse add them to a large bowl
  • Dice up celery, pickles, bell pepper and green onion (both green and white side) nice and small then add this into the same bowl as the chickpeas
  • Add the vegenaise, salt and pepper
  • With a potato masher start mashing and mixing! You want to see a nice and creamy consistency
  • Add few scoops onto your favourite bread or bun and enjoy!
  • Cover and let sit in fridge for up to seven days

Side note: With this recipe feel free to add any of your favourite raw veggies, like carrots or tomatoes, anything goes in this sandwich. Sometime i’ll even add cumin! Bon appétit
