Vegan Chickpea Sandwich
Chickpea Sandwiches
If you are looking for a new yummy sandwich, look no further! This chickpea sandwich is all vegan, very fresh and of course healthy!
Prep time – 10 min
Cook time – 0 min enjoy right after or let sit in fridge up to a week
Serves – 4
Ingredients
- 2 cans of chickpeas
- ½ red or orange bell pepper
- 1 bunch of green onion
- 2 stalks of celery
- 2 tbsp Vegenaise
- ½ cup diced dill pickles
- Salt and pepper to taste
- Fresh bread or wrap
Directions
- Drain and wash chickpeas, after giving them a good rinse add them to a large bowl
- Dice up celery, pickles, bell pepper and green onion (both green and white side) nice and small then add this into the same bowl as the chickpeas
- Add the vegenaise, salt and pepper
- With a potato masher start mashing and mixing! You want to see a nice and creamy consistency
- Add few scoops onto your favourite bread or bun and enjoy!
- Cover and let sit in fridge for up to seven days
Side note: With this recipe feel free to add any of your favourite raw veggies, like carrots or tomatoes, anything goes in this sandwich. Sometime i’ll even add cumin! Bon appétit
