Breakfast can be tough when the kids want pancakes, but the one making the pancakes is vegan and gluten-free. So here is a simple pancake recipe I use that my whole family enjoys.
Vegan Gluten-Free Pancakes
Ingredients
- 1 scoop vegan protein powder
- 9 tablespoons of aquafaba (liquid from a can of chickpeas)
- 1/2 cup gluten-free rolled oats
- 1 medium banana
- 2 tsp baking powder
Directions
- Mix all ingredients in a blender or food processor until smooth consistency
- If needed, to thin out the batter, add a soy or nut milk
- Cook on a lightly greased warm skillet
- Add any additional toppings if you wish (fresh fruit, vegan chocolate chips, pure maple syrup)
