This is a great salad recipe and I am making it at least once a week and happy to share it with you.
Pumpkin is not only a decoration for Halloween but according to the USDA National Nutrient Database, one cup of pumpkin contains:
- 49 calories
- 76 grams of protein
- 17 grams of fat
- 0 grams of cholesterol
- 12 grams of carbohydrate (including 2.7 grams of fiber and 5.1 grams of sugar)
Quinoa is a great source of protein and has a relatively low glycemic index and it tastes great!
Vegan Pumpkin And Quinoa Salad
Ingredients
- 1 cup of quinoa
- ½ cup of roasted pumpkin
- 1 cup of arugula
- ½ cup of roasted beetroot
- 1/3 cup of cherry tomatoes
- Roasted pine nuts
- Salt, pepper, olive oil
Preparation
- Cook quinoa in water (2 cups of water and 1 cup of quinoa), until water boils out, approximately 15 min
- Separately cut pumpkin and beetroot into cubes, add a bit of salt and olive oil and put it into the over and let it roast until tender
- After all the ingredients are cooled down, mix them together and add salt, pepper and olive oil as a dressing
