Chia seed puddings are versatile. You can use them for breakfasts, snacks, or desserts. The are really easy to make; the only thing that’s time consuming about them is letting the set for a few hours or overnight in the fridge. Chia seeds are nutritious being full of iron, calcium, potassium, protein and antioxidants. With all of these nutrients it is not wonder that they provide energy, boost strength and endurance, improve blood sugar levels, and support intestinal regularity.
It is fun, amusing, and interesting to see what kind of puddings you can throw together using chia seeds. Recently I threw together the following for something like a Peach Cobbler Chia Pudding.
Yummy Chia Seed Pudding
Ingredients
- 1/2 cup chia seeds
- 1/4 cup oatmeal
- 2 Tbsp Hemp Seeds
- 1/4 cup raisins
- 1 Peach (you could probably substitute 1.5-2 cups of canned peaches with juices)
- 2 cups of plain, unsweetened almond milk
- 2.5 Tbsp pure maple syrup
- 1 Tsp of pure vanilla extract
Directions
- Finely chop the peach(es) (I like texture, but you could probably blend or mash the peaches for a smoother texture).
- Add the chopped peaches to a medium sized bowl with the oatmeal, hemp seeds, and raisins. Mix together.
- Add the almond milk, maple syrup and vanilla extract and mix further.
- Add chia seeds and stir in gently and well.
- Let the pudding mixture sit for about five minutes
- Divide the pudding into four lidded containers in about 1/2 cup serving sizes. Cover the containers with the lids and place in the fridge for 3-4 hours, or overnight.
Feel free to play with recipe until you find a consistency or flavour that suits you.
