This is a total cheat way of making jam! With none of the cane sugar and the magic of chia.
Chia seeds don’t only serve to thicken this magical jam, they also add a punch of health benefits:
They’re rich in fibre, packed with omega-3 and protein, and they’re high in vitamins, minerals and antioxidants.
Healthful Jam
Ingredients
- 2 cups chopped fruit of choice, prepared (fresh of frozen)
- 1 tbsp lemon juice
- 2 tbsp maple syrup
- 3 tbsp chia seeds
Method
- Cook fruit in a saucepan over medium heat for 5-10 minutes until it starts to break down
- Mash the fruit to desired consistency
- Remove from heat and stir on lemon juice and maple syrup
- Stir in chia seeds and let stand for 10 minutes, until thicked
- Jam can be made thicker by adding chia seeds 1 tsp at a time
