Perfect for an energizing snack on the go, these granola bars will satisfy both your salty and sweet cravings!
Salty & Sweet Grain – Free Granola Bars
Ingredients
- 1/2 cup sunflower seeds
- 1/4 cup pumpkin seeds
- 1/4 cup sesame seeds
- 1/4 cup hemp seeds
- 1/4 cup almonds, chopped
- 1 egg white
- 1 1/2 tbs coconut nectar
- 2 Tbs nut butter of choicee
- 1 Tbs nutritional yeast
- 1/4 tsp salt
- Pinch of cayenne (optional)
Method
- Mix all the seeds, nuts, and seasoning in a bowl.
- Beat the egg white until frothy.
- Add the egg white, nut butter and coconut nectar to the seeds and nuts, and mix well.
- Line a square dish (8″ by 8″) with parchment paper or lightly grease with coconut oil. Spread the seeds mixture evenly to the bottom of the dish, by pressing firmly down, until it’s 1/4-inch thick. Put it in the freezer for an hour, or more, till it firms up fully.
- Preheat oven to 300° F.
- Once the dough firms up, take out from the freezer, and cut into 8 rectangles, or leave and break up when finished for loose granola. Bake for 25 minutes, then flip over, and bake for another 15-20 minutes. Let cool completely before eating.
