Healthful Beet Bortch
Ingredients
- 8 cups vegetable broth
- 4 beets, medium shredded
- 1 carrot, large shredded
- 2 potatoes, medium shredded
- ½ head of red cabbage, shredded
- 1 onion, diced
- 5 garlic cloves
- 1 tbsp dill
- 2 bay leaves
- 1 tbsp dry parsley
- 5 tbsp tomato paste
- 1 tbsp sugar
- 2 tbsp apple cider vinegar
Directions
- Shredding all your vegetables gives them a quicker and equal cooking time. Add the first 5 ingredients to a large pot and boil for 15 minutes.
- Add the remaining ingredients and cook over medium heat for 30 mins.
- Add salt and pepper to taste and enjoy!

- 100g of beet is said to contain 11% of your daily fiber, 3% protein and 27% folate.
- Folate helps with the development of a fetus’ spinal column.
- Great source of Vitamin C and can improve immune function; including preventing asthma symptoms.
- Contains beta-carotene, a form of Vitamin A, which an antioxidant that helps prevent free radicals.
- PRO TIP: add ground flaxseed for additional fiber!
