Vegan Tofu Scramble
Ingredients
- 1 pound firm organic tofu
- 1 small yellow onion
- 2 clove garlic
- 1 red or yellow pepper
- 2 celery ribs
- 1/2 cup sliced mushrooms
- 1/2 cup chopped kale/spinach
- 1 tsp Better than beef bouillon or 1 tbs Vegetable Broth
- 1/4 cup Nutritional yeast
- 1/2 tsp dried sage
- 1/4 tsp raw turmeric
- 1/2 tsp garlic salt
- 1/2 tsp onion salt
- Salt and pepper
*Also you can add 1 tsp of curry powder for a kick.
Instructions
- Take tofu out of packaging, place in a bowl with all dry seasonings, including salt and pepper, and mix together. Let sit for 5-10 min
- Chop up veggie ingredients, add them to the frying pan or pot at medium heat. (not garlic and kale/spinach yet)
- Once veggies are translucent and soft, add the better than beef bullion with a splash of water, or Vegetable Broth.
- Add tofu mixture and stir. Cover and let simmer for 5 mins
- Add the chopped garlic and kale/spinach and stir in. Cover for 5 mins
- Add nutritional yeast and stir in.
- Let it all simmer for another 5 to 10 minutes on low.
- Then stir and serve!
* Add to toast with fresh avocado, tomato, and sprouts for extra living nutrition.
