Spiced Pear Overnight Oats

I love quick and easy breakfasts for busy mornings. Overnight oats are easy to prepare the night before and can be made in large quantities for the week ahead. Oats are full of fibre, help regulate blood sugar and lower cholesterol.

Spiced Pear Overnight Oats

Serves: 2

Ingredients

  • 1 cup of oats
  • 1 1/4 cups of non-dairy milk
  • 3 tbsp chia seeds
  • 2 tbsp maple syrup
  • 1/4 tsp cinnamon
  • 1/8 tsp vanilla extract
  • 4 tbsp chopped walnuts
  • 2 small organic pears

Instructions 

  • Mix the first six ingredients together in a large bowl.
  • Divide the oatmeal into two containers.
  • Refrigerate overnight.
  • Dice the pear and add it to the oatmeal along with the walnuts right before you’re ready to eat.
