Recipe: Otter Balls

Or energy bites as you might already know them. I named these little guys Otter Balls because the day I made this recipe I saw my first otter. Well, my first otter in its natural habitat, I’ve seen them in a zoo before. But seeing an animal in the wild is worth 1000 in a zoo, seriously, say no to zoos folks!

Energy bites are a serious staple in my house, there’s a runner, a gym rat and a couple of serious sweet teeth. A lot of energy bites I see have oil in them…why?! I’m on a weight loss mission and oil is used sparingly in this house for the time being, luckily these otter balls just don’t need it.

They’re naturally sweet, crunchy, chocolatey, vegan and perfect running fuel. At less than 100 calories a pop they’re great for those of us watching our snacks.

Ingredients

  • 0.5 cup almonds
  • 10 medjool dates
  • 2 tbsp raw cacao powder
  • 1 tbsp chia seeds
  • 1 tbsp hemp seeds

Method

  • Pulse almonds in food processor until they’re in small pieces
  • Add remaining ingredients and 2 tbsp water and mix until combined
  • Separate dough into 12 evenly sized pieces and roll into balls
  • Place in freezer for 20 mins before eating (they can be stored in the fridge or freezer, we love them from the freezer)
