You know your Mama was right… EAT.YOUR.VEGETABLES!
5 Easy Ways To Eat More Veggies!
Ohhh.. That conjures childhood memories of sitting literally for hours staring at my plate of cold, canned green beans! UUGH! My mum would even bribe me by putting my dessert in front of me… Which I couldn’t have until I finished my veggies… Well played, Ma! Now I’m all grown up, I’ve found a few easy ways to get in the recommended 7-8 servings per day (fruits and veggies) (click here to see the current Canada’s Food Guide)
Tips:
Veggie Omelette: (which usually turns into veggie scrambled eggs when I go to flip it) I find this the easiest way to get veggies in my belly right from the get-go.
Fruit and Veggie Smoothie: unless it turns her smoothie green, this is my favourite way to sneak veggies into my daughter. Me.. I like the greens!
Veggie tray in the fridge: if it’s already cut up and ready to eat, the more likely you are to grab some for a snack or with a meal.
Soup: super easy to make, brimming with nutrition and all kinds of veggies, homemade soup is definitely a family favourite! (Also my favourite way to use up veggies that are about to die!)
Oven Roasted or BBQ’d: roasted root vegetables are one of my absolute musts every week! Again, so easy to throw a variety of vegetables onto a cookie sheet, toss with some oil and roast. (roasted sweet potatoes and eggs with sautéed kale is one of my favourite breakfasts!)
BONUS TIPS:
- I try to buy organic when possible (like if the budget allows it) or when available from our local farmer’s markets. If I can’t buy ALL organic produce, I try to choose veggies from the “dirty dozen” list.
- The Environment Working Group also has the “clean 15” list – the top produce that’s the safest to eat (but note that if the produce is likely to be a GMO crop, then consider organic as well).
- And talk about easy, the Environmental Working Group now has a phone app to make healthier choices even easier!
