Hi everyone!
I am currently trying to stick to a healthy diet, avoiding refined sugar and flour. What has been most difficult to me is to stay away from sugar! As I explained in one of my older posts, sugar is extremely bad for you. In my opinion it is a legalized drug. I considered myself a sugar addict so staying away is a challenge. So, in order to accomplish my goal of eating healthy and lowering my sugar intake I find myself trying new recipes. I tried to cook healthy desserts to calm down my sweet tooth. One of my favourite so far is an apple cake.
Apple Cake
Ingredients
- 2 apples (cut in cubes)
- ½ cup of dark chocolate chips (70% at least)
- 1 cup of oat flour
- 1/2 cup of nuts
- 1 cup of almond flour
- 1 tbsp of cinnamon
- 2 eggs
- ¼ cup of coconut oil
- ½ cup of apple sauce (no sugar added)
- Stevia (at your preference): I leave it at your preference because I am still figuring out how to cook with it as it is really sweet.
- I like to add a little bit of sugar free maple syrup, it is also at your preference
Steps
- Preheat the oven at 375 F
- In a bowl add: oats, almond flour
- In another bowl add eggs, coconut oil, maple syrup and apple sauce and mix
- Add the the first bowl (oats, almond flour and cinnamon) to the mix
- Add the apples, nut and chocolate chips
- Add the mix in a cake pan
- Bake for 40 mins
- Enjoy your piece of cake with a cup of coffee or tea
