This soup is great for the colder weather especially with the warming properties of the ginger. I never thought to mix beets and ginger but it turned out to be really yummy!
Beet And Ginger Soup
Here is the recipe I used, enjoy!
Ingredients
- 1 Yellow onion diced
- 3 Cloves of garlic minced
- 1 Tbsp of finely chopped ginger
- 1 Container of organic vegetable broth
- 3 Large beets cut into 1/4 pieces
- 1 Tbsp of olive oil
Directions
- First, cook the onion and garlic in a saucepan until onion are translucent
- Then add the beets and the broth and let simmer until the beets are easily pierced with a fork
- Remove beet from soup, cut into smaller pieces or mashed and then add with soup in blender until smooth
- I added water to reach desired consistency, then serve with fresh parsley!
