Carrot and Apple Plantain Pancakes

Bring the tropics to your breakfast plate with these tantalizing plantain pancakes!

Full of fiber, antioxidants, vitamins A and C, potassium and omega 3’s, they leave you feeling nourished and energized and are simply a scrumptious experience!

Preheat your frying pan on medium…

Soak in a small bowl:

  • 1 Tablespoon golden flaxseeds and 3 Tablespoons filtered water

Add to food processor:

  • 1/2 yellow plantain, sliced
  • 1/2 apple, grated
  • 1/2 carrot, peeled and grated
  • 1/4 teaspoon each of baking soda, turmeric and cinnamon
  • 1 Tablespoon coconut flour (or flour of your choice)
  • optional: small splash of mineral water (for added fluffiness)

…add flax “egg” to processor and blend all ingredients until you get a nice, smooth batter (about 20 seconds)

…add a teaspoon of coconut oil to pan and fry until a golden brown on both sides

Top with your choice of nut butter, coconut manna, berries, coconut aminos, cacao nibs…

Enjoy and savour each bite!
