Chewy Granola Bars

Soft, Chewy Gluten-Free, Almost Vegan* Granola Bars

*(contains honey but this can be swapped for maple syrup)

I remember growing up on packaged granola bars, loaded with sugar, yet we were told these were ‘healthy’!

I spent quite a while experimenting with various granola bar recipes: some were too hard, some too soft, too sweet, not sweet enough, the list could go on. These have become my favourite recipe for the last few years. It’s super easy to make, with few ingredients. It really starts off with a base recipe, then you can add whatever you’d like to the base.

Here’s the basic recipe

  • 3 cups oats
  • 1 cup almond butter (or peanut or another nut/seed butter)
  • ½ cup honey (could also use maple syrup)

There’s only 3 basic ingredients then you can add whatever you like. I like to add slivered almonds, goji berries and dairy free chocolate chips. You could also add nuts, seeds, dried fruit, etc. No need to measure these items, just eyeball it.

To make them

  • Combine your dry ingredients in a bowl (oats and whatever extras you want. I would add oats, slivered almonds and goji berries here)
  • Set aside
  • In a small saucepan, heat the almond butter and honey on low just until they’re mixed together
  • Pour the butter/honey mix into the bowl with the dry ingredients and stir, stir, stir (I’ve broken a few wooden spoons stirring this!)
  • When combined, I let it sit for a few minutes before adding the chocolate chips, so they don’t melt
  • Line an 8×8 or 9×9 square pan with tin foil (and grease) or parchment paper
  • When your goodies are combined, drop it all into the pan and press down with a spatula/wooden spoon
  • It’s really important to press everything down with some good pressure. You’ll find that if you don’t, the granola bars will fall apart/crumble when you cut them. It took me several times of making these to get the consistency right
  • Then throw it in the fridge to set for at least 4 hours (I usually leave them overnight)
  • Take them out once set, cut and enjoy!

These are so easy to make, I’ll never buy pre-made granola bars again.
