Easy Vegan Pancakes

When I made the switch from a vegetarian diet to completely plant-based, there were a few non-negotiable meals that I could not give up! I have been eating pancakes since I was a little girl, some of my fondest memories growing up were coming downstairs to the kitchen on Sunday mornings and eating chocolate chip pancakes with my sister.

Since being vegan, I have played around in the kitchen a lot trying to find the best plant-based pancake recipe. I’ve finally found something that I love and is super easy to make! A simple 4 ingredient recipe and all you need is a blender or food processor!

Easy Vegan Pancakes

Ingredients

  • Rolled oats (~1 cup)
  • Bananas (1.5 large)
  • Baking powder (1 tablespoon)
  • Salt (just a dash)
  • Cinnamon (optional for flavouring)
  • Optional plant based milk/water if you like your pancakes a little thinner

Directions

  • Blend the oats in a blender or food processor until they are fine and have a flour-like consistency.

  • Add the salt, baking powder and optional cinnamon to the oats and blend until all ingredients are mixed will together

  • Chop up the bananas and add to the dry ingredients in the blender. Mix until there is a smooth consistency. If the batter is too thick for your liking, you can add some water/plant-based milk to make the batter thinner (you will get more pancakes out of the batter this way).

  • Take 1/4 cup of the batter onto a lightly oiled or non-stick pan and cook each side until they are golden brown, you will begin to see bubbles forming on the top when the pancake is ready to be flipped.

  • I like to add peanut butter and mangos on top of my pancakes for a natural-sweetener. Of course you can add whatever toppings you would like (chocolate chips, maple syrup, blueberries, nuts, etc.)
