Eggplant Pizza Recipe

Hi! My name is Samantha Lederman and welcome to by blog. For my first post, I thought I would share one of my favourite recipe creations with you: Eggplant Pizzas!

When I first made this recipe, I was wanting to make something different for lunch/dinner. I wanted the meal to be quick and simple to make, yet filled with nutritious ingredients.

Did you know that when you eat nutritious foods, you can actually FEEL the difference it makes in your body? The assortment of benefits is amazing! When you eat nutritious, whole foods- you truly feel better. You will feel more energized and productive, your digestion will improve, your psychological and mental state will improve, and your immune system will be working in top form. Overall, the idea is simple: Eat healthy foods and your body will thank you.

Here is my recipe for Eggplant Pizzas. I hope you all enjoy them as much as I do!

Eggplant Pizza Recipe

Ingredients

  • 1 large eggplant
  • 1 cup crushed organic tomatoes
  • 2 cloves of crushed garlic
  • 1 cup shiitake mushrooms (chopped or sliced)
  • 1 small bunch of fresh organic basil
  • 1 small bunch of fresh organic oregano
  • 1/8 cup of nutritional yeast (for that “cheesy” goodness!)

Directions

  • Preheat oven to 350
  • Be sure to wash all produce very well
  • Slice eggplant into rounds approx. 1/4 inch thick
  • Lay eggplant slices onto a baking sheet and bake for 10 minutes (use careful attention if greasing your baking pan. The eggplant will very easily absorb any excess oil, so be sure to minimize this)
  • After 10 minutes, remove eggplant slices from the oven (leave the oven on, you will be using it again shortly!) and begin to add your toppings
  • Begin by mixing the crushed tomatoes and garlic to make your “sauce” (The tomatoes are packed with vitamin C and garlic is a natural antibiotic, anti-inflammatory, detoxifier and provides great immune support)
  • Add 1 tsp-1 tbsp of sauce on top of each eggplant round (choose your personal preference of sauce amount)
  • Next, add a layer of chopped or sliced shiitake mushrooms (this flavourful topping is immune supporting, a rich source of B vitamins and a complete protein!)
  • Add 2 basil leaves (chopped or whole) on top of the mushrooms
  • Add 1-2 oregano leaves (chopped or whole) onto each pizza
  • Now that each eggplant pizza has it’s toppings, put the tray with the pizzas back into the preheated oven and bake for 10 minutes.
  • Once 10 minutes has passed, remove baking tray with pizzas from the oven
  • Finally, sprinkle 1/4 tsp of Nutritional Yeast on top of each pizza round and ENJOY!
