In the winter time I love the smell of banana bread baking in the oven.
The whole family loves it when I bake, so I have been making adjustments to some basic recipes I have been using for years to help make them a bit healthier.
My family never noticed when I started cutting out some of the sugar, switching the type of sugar, or when I switched out the white flour for a healthier option, being protein packed chickpea flour. So, here is what I have come up with for my banana bread recipe.
Banana Bread Recipe
Ingredients
- 1/2 cup ghee (softened)
- 1/4 cup coconut sugar
- 1/4 cup maple syrup
- 1tsp vanilla extract
- 1 1/2 tsp cinnamon
- 2 eggs
- 4 very ripe bananas
- 1 cup chickpea flour
- 1 cup whole wheat flour
- 1 tsp baking soda
- 1/4 tsp salt
- 1/2 cup chopped walnuts (optional)
Instructions:
First, mix together all of your dry ingredients (excluding nuts if being used) in a large bowl.
Next, combine all of the wet ingredients making sure the banana is well broken up.
Then, combine both mixtures together and add the nuts if you are choosing to include them.
Pour batter into a loaf pan. I prefer a stone pan, but any will work.
Place the pan into a preheated, 350 degree oven and bake for 60 minutes. Allow bread to fully cool down before cutting and removing from the pan.
