Gluten-Free Flax Cinnamon Raisin Muffins

Looking for a healthy treat to satisfy the afternoon craving, or maybe a little something extra with your morning smoothie? I have something that will just hit the spot without the guilt. These muffins are gluten-free, low in sugar and carbs and are delicious too!

Gluten-Free Flax Cinnamon Raisin Muffins

Ingredients 

  • 1 cup ground golden flax seed
  • 1/2 cup coconut flour
  • 1/2 tsp baking powder
  • 2 tsp cinnamon, more if you like the taste of cinnamon ( I use 1 tbsp)
  • 1/ cup coconut sugar (can be substituted with 1 cup unsweetened apple sauce or 1 overripe mashed banana)
  • 4 eggs
  • 1 tsp lemon juice
  • 1/2 cup coconut oil, melted
  • pinch of sea salt
  • 1 cup almond milk or 1 cup plain greek yogurt
  • 1 cup organic raisins

Directions

  • Preheat oven to 400 degrees Fahrenheit
  • Place dry ingredients in a large bowl minus the raisins and mix, Put aside
  • Place wet ingredients in another bowl and mix
  • Add dry ingredients slowly, mix until well blended
  • If the batter seems a bit dry, add a little more almond milk
  • Line muffin tins with liners or grease
  • Add batter to tin 3/4 full and place in a 400 degree oven until golden brown or a toothpick comes out clean
  • Cool and enjoy
  • When cool place in an air tight container and store in the refrigerator. If they last that long
