Looking for a healthy treat to satisfy the afternoon craving, or maybe a little something extra with your morning smoothie? I have something that will just hit the spot without the guilt. These muffins are gluten-free, low in sugar and carbs and are delicious too!
Gluten-Free Flax Cinnamon Raisin Muffins
Ingredients
- 1 cup ground golden flax seed
- 1/2 cup coconut flour
- 1/2 tsp baking powder
- 2 tsp cinnamon, more if you like the taste of cinnamon ( I use 1 tbsp)
- 1/ cup coconut sugar (can be substituted with 1 cup unsweetened apple sauce or 1 overripe mashed banana)
- 4 eggs
- 1 tsp lemon juice
- 1/2 cup coconut oil, melted
- pinch of sea salt
- 1 cup almond milk or 1 cup plain greek yogurt
- 1 cup organic raisins
Directions
- Preheat oven to 400 degrees Fahrenheit
- Place dry ingredients in a large bowl minus the raisins and mix, Put aside
- Place wet ingredients in another bowl and mix
- Add dry ingredients slowly, mix until well blended
- If the batter seems a bit dry, add a little more almond milk
- Line muffin tins with liners or grease
- Add batter to tin 3/4 full and place in a 400 degree oven until golden brown or a toothpick comes out clean
- Cool and enjoy
- When cool place in an air tight container and store in the refrigerator. If they last that long
